Zucchini Bread
3 cups flour
1 tablespoon baking powder
1 teaspoon slat
½ teaspoon ground cinnamon
½ teaspoon freshly grated nutmeg
½ teaspoon ground cloves
¼ teaspoon ground allspice
½ cup milk
2 eggs, lightly beaten
½ cup vegetable oil
1 ½ cups firmly packed brown sugar
2 ½ cups grated zucchini
Optional – 2 cups chopped walnuts
Preheat oven to 350 degrees F. Grease and lightly flour two 4 ½ by 8 ½ inch loaf pans.
In a large bowl, sift flour, baking powder, salt, cinnamon, nutmeg, cloves and allspice. In another bowl combine milk, eggs, oil and sugar. Pour wet ingredients into flour bowl, stir. Add zucchini and walnuts, stir. Pour evenly into 2 loaf pans and bake until center comes out clean with wooden pick (about 1 hour). Cool in pans for 15 minutes then take out of pans to cool completely. Makes 2 loaves.
