Wagon Wheel Soup
1 med onion
1 lb. ground beef or turkey
1 15-oz can beef broth
1 15-oz-can stewed Italian style tomatoes
2 cups water
1 cup wagon wheel pasta
1 cup frozen corn kernels
1 cup frozen cut green
1 tsp. dried basil
1/2 tsp. dried oregano
Dlce onion and set aside. Saute ground meat in a saucepan, breaking up the meat with a spoon. Add onion and cook over medium heat until browned, stirring occasionally. Remove from heat, drain, and return to pan.
Stir in beef broth and water. Heat to boiling over high heat. Add macaroni and cook on medium heat for 12 minutes, stirring often.
Reduce heat and add corn, green beans, basil, oregano and tomatoes with juice. Bring to boil, reduce heat and cover. Cook, string occasionally, on low heat until tender (about 10 mln.)
Serve with crusty bread or breadsticks. |
