Turkey Lasagna

1 pkg (1 ¼ lbs) of ground turkey
6 wide Lasagna noodles --- cooked, drained
½ cup chopped onion – (can leave out if kids don’t like)
4 cups of tomato sauce (any bottled marinara will do)
1 cup ricotta cheese
4 to 8 ozs of sliced Mozzarella
2 tablespoon Parmesan cheese

Preheat oven to 350 degrees.  Spray skillet with an non-stick vegetable oil spray. Ground turkey in pan and then add onion.  Cook and stir on medium-high heat for 5 to 7 minutes-until lightly browned.  Stir in sauce and cook on low for 15 minutes. Set aside 1 cup of tomato sauce.  Line the bottom of a 13 x 9 baking dish with 3 noodles, then top with 2 cups of sauce, ½ cup of the ricotta cheese and ½ cup of Mozzarella. Repeat layers. Use the reserved cup of sauce for the top. Sprinkle with Parmesean.  Bake for 30-40 minutes until bubbly.   Let stand for 10 minutes.    Serves 8.
