Sun Dried Tomato Cream Soup
 

1/4 cup oil packed Sun dried tomatoes, drained.
2 cups tomato juice
2 cups whipping cream
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
fresh basil
In a blender, combine drained Sun Dried Tomaotes and 1 cup of tomato juice. Puree to a smooth consistency. Pour mixture into a large saucepan and add remaining cup of tomato juice. Bring to a boil. Remove from heat and add in whipping cream, salt and paper. Cook over low heat, do not boil. Garnish with basil.
