4 large sweet potatoes, or yams, peeled and sliced (1/2 inch thickness) Preheat oven to 425 degrees. Mix together spices (spice grinder or mortar and pestle work best). In a large bowl, toss sliced sweet potatoes in olive oil until coated. Add 4 tsp spice mixture (add more or use less to taste) and toss until evenly distributed among potato slices. Spread potatoes in single layer on greased cookie sheet (non-stick spray may be used) and bake until they are cooked through and light brown on the outside (usually 30-45 minutes). Serve hot. These go well with your favorite fruit jam or ranch dressing as a dipping sauce
