Mellow Sweet
6-8 large sweet potatoes (or yams)
½ cup of brown sugar
½ stick of butter
Mini marshmallows
Boil Sweet Potatoes in 8 quart pot until soft. Let cool then peel and
cut into ½ inch slices. Line in rows in Pyrex Baking Dish. Melt
butter, drizzle over potatoes. Then, sprinkle brown sugar on top. 15
minutes before serving, cover entire dish with mini marshmallows. Put
in oven at 350 degrees until marshmallows melt and turn a light brown.
Serves 8. Maple syrup may be substituted for brown sugar.
