Homemade Mac and Cheese - A Fannie Farmer recipe.

1 package of macaroni
4 tablespoons butter
4 tablespoons flour
1 cup milk
1 cup cream
½ teaspoon salt
fresh ground black pepper to taste
2 cups good quality shredded cheddar cheese, divided
½ cup buttered breadcrumbs

Preheat oven to 375 degrees F. Cook and drain macaroni per package directions set aside. Melt the butter in a large saucepan. Add flour with a bit of salt and pepper, stir until well blended. Slowly add milk and cream, stirring constantly. Bring to a boil-about 2 minutes. Lower heat and cook 3 minutes more. Add 1 ½ cups of shredded cheddar cheese and simmer an additional 3 minutes or until cheese melts. Remove from heat. Add cooked macaroni, stir until coated. Place macaroni and cheese in a buttered baking dish. Sprinkle with remaining ½ cup of cheese. Sprinkle with breadcrumbs and bake 20 minutes until golden brown and bubbling.
