Tuna Melt Burgers

12 ounces fresh tuna
2 tablespoons mayonnaise

1 tablespoon unsalted butter
1 tablespoon vegetable oil
2 Monterey Jack cheese slices
2 hamburger buns, lightly toasted
2 large tomato slices
2 romaine lettuce leaves
Salt and Pepper to taste
Optional: Mustard, Fresh Lemon wedges

Trim tuna, removing skin and any dark spots. Cut tuna into 1-inch pieces. Transfer to food processor. Using on/off turns, chop tuna to resemble texture of ground beef. Transfer to bowl and mix in mayonnaise. Season with salt and pepper. Form into 2 3/4-inch-thick patties.

Melt butter with oil in a heavy, medium skillet over med-high heat. Add tuna patties and cook 4 minutes. Turn and cook until just slightly pink in center, about 2 minutes. Top with cheese, cover skillet and cook until cheese melts and tuna is cooked through, about 1 minute. Place on buns and stack with tomato and lettuce.
