Corn Chowder

1 onion, chopped
1 bell pepper, seeded and chopped
2 tbs. butter
3 medium potatoes, peeled and diced (about 3 cups)
1 15-oz. can cream corn
1 12-oz. can evaporated milk
2 cups water
salt
pepper

Melt butter in skillet. Add onion and pepper and saute until onion is translucent. Add diced potato and water and bring to a boil. Reduce heat and simmer 20 minutes, or until potatoes are tender.

Stir in milk and creamed corn. If necessary, thin with water. Add salt and pepper to taste. Simmer 15-20 minutes and serve.
