2 tablespoons olive oil In a 12 inch skillet, heat olive oil over medium-high heat. Add potatoes, garlic and shallot and toss until well mixed. Add thyme, rosemary and nutmeg. Toss well again. When potatoes are hot, spread them in a single layer on a baking sheet. Place sheet on lower rack at 400 degrees. Roast until golden and just tender, turning once midway, approx. 25 minutes. Add vinegar and toss. Add salt and pepper to taste. Place back in oven for 7 minutes, until sizzling. Serve immediately. Serves 6.
